Birses 2020 – Unfiltered

We snuck a little quince in alongside the Idared and Golden. It doesn't just fill in the tannins missing from dessert apples – it also brings beautiful citrusy, floral and rosy aromas. Crafted using traditional bottle fermentation – and this batch has not been disgorged. Unfiltered, the fine lees stay in the bottle, continuously deepening the character of the cider.

Elegant and complex, yet light and easygoing. Naturally cloudy from the fine lees: pour it carefully off the sediment, or give it a swirl and enjoy the full depth – either way, it's worth it.

A great match for barbecue and grilled food – especially pork, lamb, or more boldly flavoured grilled vegetables. Characterful, but never heavy.
